
Crispy Cajun Chicken with Corn Maque Choux
Delicious and nutritious, high protein and gluten-free meal, that is packed with flavour and tasty vegetables.
Ingredients
- 400g (14oz) chicken breast pieces
- 60g (2oz) filtered water
- 1 tbsp corn starch
- 1 tsp cajun spice
- 3 tbsp extra virgin coconut oil
- 100g (3.5oz) gluten-free bread crumbs/ corn flakes (ground)
- 1X Cajun Corn Maque Choux full recipe (see recipe link below)
Instructions
- In a bowl, mix the water, cajun spices and corn starch flour, then place the chicken pieces into the mixture, coat well, then transfer to another bowl filled with bread crumbs / ground corn flakes
- Fry on medium heat in 3 batches in coconut oil for 6-8 minutes and serve with the Corn Maque Choux.
Notes
This is a super easy and very tasty dish that contains no gluten, minimal preservatives and is high in protein, grain-free with 2 portions of vegetables per serving.
