Turmeric Scrambled Egg with Avocado & a Seed Cracker

This is a quick and easy breakfast or lunch meal that includes 2 portions of vegetables, is gluten-free, keto and low-carb friendly.

Ingredients

  • 2 large eggs
  • 1/2 avocado
  • 1 40g (1.4oz) seed cracker (see recipe below)
  • 1 spring onion, sliced
  • 1/2 tsp butter, unsalted
  • 1 large tomato, cubed
  • 1 tbsp parsley, finely chopped
  • 1/2 tsp turmeric powder
  • Salt & pepper to taste

Instructions

  1. Whisk the eggs with the turmeric
  2. Fry the spring onion and tomato for 2 minutes in butter on medium heat, then add the egg and cook for another 3 minutes (or until cooked), then stir through the parsley.
  3. Serve with 1/2 an avocado and a seed cracker.

Notes

This is a meal packed with healthy fats, protein, fibre and 2 portions of vegetables.
