This is a super easy, quick and delicious salad that can be enjoyed for lunch at work and contains healthy vegetables and proteins.

Ingredients

  • 160g (5.6oz or 1.5cups) sliced red cabbage
  • 80g (2.8oz or 1/2 cup) cooked beetroot, sliced
  • 50g (1.8oz or 1/4 cup) soft goat's cheese
  • 30g (1 oz or 1/4 cup) unsalted, raw walnuts
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp fresh thyme
  • A pinch of salt and pepper

Instructions

  1. In a small bowl, combine the olive oil, balsamic vinegar, honey, salt and pepper and stir well.
  2. In a medium bowl, combine the cabbage, beetroot, cheese and walnuts, then drizzle over the salad dressing, serve and enjoy.

Notes

This is a super easy and nutritious salad that can be taken to work and enjoyed. It is low-calorie & low-carb and because it has a decent amount of fibre, protein and healthy fats, such as omega 3 fatty acid and monounsaturated fat from the olive oil, it should keep you satiated until dinner time. These fats are very important for eye health, lowering inflammation, hormonal, neurological and cardiovascular health.
