This is a fresh and delicious, low-calorie, vegetarian summer salad that can be enjoyed as a side or a light mains for lunch or dinner.

Ingredients

  • 200g (7oz or 1.5 cup) sliced, steamed broccoli
  • 200g (7oz or 1.5 cup) sliced red cabbage
  • 200g (7oz or 1.5 cups) sliced buffalo mozarella
  • 1/2 sliced orange
  • 3 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp fresh thyme
  • A pinch of salt and pepper
  • 1 clove minced garlic

Instructions

  1. Mince the garlic and set aside for 10 minutes
  2. Combine the garlic, oil, vinegar, salt, pepper and honey in a small bowl and stir well
  3. Place all the salad ingredients in a large bowl, pour over the dressing and stir well.
  4. Serve as a light mains or as a side dish.

Notes

This is a super easy, light and delicious Italian-cuisine inspired salad that can be enjoyed as a mains or as a side dish to pizza, lasagne, pasta or at a barbecue. Broccoli and cabbage both fall under the brassica vegetables, which are high in vitamin C, A, K, folate, magnesium and glucosinolate phyto-chemicals that help support liver detoxification and are anti-cancer in nature, protecting from breast, cervical and prostate cancers.
