
Buffalo Mozzarella, Broccoli, Red Cabbage and Orange Salad
This is a fresh and delicious, low-calorie, vegetarian summer salad that can be enjoyed as a side or a light mains for lunch or dinner.
Ingredients
- 200g (7oz or 1.5 cup) sliced, steamed broccoli
- 200g (7oz or 1.5 cup) sliced red cabbage
- 200g (7oz or 1.5 cups) sliced buffalo mozarella
- 1/2 sliced orange
- 3 tbsp extra virgin olive oil
- 2 tsp balsamic vinegar
- 1 tsp honey
- 1 tsp fresh thyme
- A pinch of salt and pepper
- 1 clove minced garlic
Instructions
- Mince the garlic and set aside for 10 minutes
- Combine the garlic, oil, vinegar, salt, pepper and honey in a small bowl and stir well
- Place all the salad ingredients in a large bowl, pour over the dressing and stir well.
- Serve as a light mains or as a side dish.
