Orange & Thyme Roast Chicken

A super delicious and succulent roast chicken recipe that is very easy to follow and can be enjoyed with a side of roast vegetables or a salad.

Ingredients

  • 1.5Kg (3.3lb) whole chicken, giblets removed, patted dry (organic)
  • 1 tbsp unsalted grass-fed butter
  • 1/2 orange
  • 2 tbsp/4 sprigs fresh thyme
  • 1 tbsp extra virgin olive oil
  • 200g (7oz or 1 cup) chicken stock (gluten-free) or 1 tsp/ 1 stock cube & cup water (Herbamare organic vegetable stock (gluten-free)
  • 1 medium red onion sliced
  • 1/2 tsp Celtic/ sea salt
  • 4 cloves of garlic, peeled

Instructions

  1. Preheat the oven to 180C /350F degree fan setting (200C/390F normal setting)
  2. Place half of the thyme and sliced onions on a medium sized oven dish & cover with chicken stock
  3. Carefully spread the butter underneath the skin using your fingers over the chicken breasts - try not to tear the skin.
  4. Place the the rest of the thyme, the garlic and the orange inside the chicken
  5. Baste the outside of the chicken with extra virgin olive oil and the sprinkle with salt
  6. Place the chicken breast side up in the oven dish, and roast for 1.5 hours, stopping every 20 minutes for the first hour to pour the stock mixture over the chicken
  7. Remove the chicken from the oven, cover and allow to rest for 15 minutes.
  8. Allow for 30 minutes cooking time for very 500g (17.5oz) of chicken, so if you have a smaller/larger roast, you need to amend the cooking times accordingly.

Notes

This is a delicious and easy recipe to follow that will guarantee crispy skin and juicy meat. Try to use organic meat where possible. Chicken is a good source of protein, B vitamins, magnesium, selenium and zinc. Chicken contains high amounts of Vitamin B6 and the amino acids tryptophan and tyrosine, which are important for neurotransmitter production.
