This is a delicious and easy gluten-free, high-protein, paleo-friendly, low-carb, keto salmon fish cakes recipe

Ingredients

  • 800g (28.2oz or 4 small) canned wild Alaskan salmon
  • 4 large free-range eggs
  • 60g (2.1oz or ⅔ cup) almond flour
  • 1 tbsp extra-virgin coconut oil
  • 1 tsp Psyllium husk

Instructions

  1. Mash all the ingredients together and form palm-size patties- you should be able to make 8 patties.
  2. Cook on medium heat for 4-5 minutes each side in a bit of coconut oil
  3. Serve with Mediterranean roast vegetables and a wedge of lemon.

Notes

This is a really easy dish that can be batch made to take along for lunch, or to serve as a light, low-calorie dinner with vegetables or a side salad. One serving contains 56.4g of protein, making it ideal for weight-loss programs or anyone following a training or sports program.
