A delicious, tasty, keto friendly, low-carb friendly granola that is packed with protein and heathy essential fatty acids.

Ingredients

  • 100g (3.5oz) raw, unsalted cashews
  • 100g (3.5oz) raw, unsalted almonds
  • 100g (3.5oz) sunflower seeds
  • 100g (3.5) flax seeds
  • 100g (3.5oz) raw, unsalted pumpkin seeds
  • 100g (3.5oz) grass-fed butter
  • 50g (1.8oz) maple syrup
  • 1 tsp vanila extract
  • 2 tsp Ceylon cinnamon

Instructions

  1. Preheat the oven to 180C/350F degrees fan
  2. Coarsely chop the nuts
  3. Melt the butter, stir in the maple syrup and vanilla essence
  4. Combine all the ingredients in a large bowl
  5. Line a baking tray with baking paper
  6. Press out the granola mix evenly on the baking paper
  7. Bake for 15 minutes
  8. Remove from the oven and let cool, then break apart and store in an air-tight container

Notes

This is a quick, delicious and nutritious keto granola that is grain free and low-carb friendly. To make it paleo-friendly, the butter can be replaced with coconut oil. The maple syrup can also be replaced with a sugar alternative such as Canderel Green (stevia and erythritol) to reduce the sugar content even further. The granola contains healthy nuts and seeds which are high in protein, fibre, polyphenols, healthy fatty acids, magnesium, selenium, zinc and vitamin Bs for a nutrient-dense and guilt-free start to your day.
