Vegan Moroccan Chickpea Roast

A delicious and healthy, protein-packed dish that can be served as a vegan mains or as a side dish

Ingredients

  • 200g (7oz) drained chickpeas
  • 1 head of cauliflower
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 medium aubergine
  • 1 large red onion
  • 100g (3.5oz) dried apricot
  • 60g (2.1oz) pitted green olives
  • 60g (2.1 oz) blanched almond pieces
  • 2 tbsp extra virgin olive oil
  • 2 tbsp Ras el Hanout spices
  • 1 tsp cinnamon

Instructions

  1. Pre-heat the oven to 180C/ 350F degrees fan setting
  2. Chop the vegetables, drizzle with olive oil, and sprinkle over the Ras el Hanout spices.
  3. Roast for an hour, stirring every 20 minutes.
  4. Once cooked, remove from the oven.
  5. Place the blanched almond slices in an oven dish and sprinkle with cinnamon, and roast for about 3-5 minutes in the oven
  6. Serve the roasted vegetables with sprinkle of almonds.
  7. Optional: you can serve this dish with quinoa and/ or a yoghurt mint sauce - although the yoghurt will convert the dish into a vegetarian dish.

Notes

This dish is low-fat, low-calorie and is packed with healthy vegetables, with approximately 3.5 portions of vegetables per serving, 12.2g of fibre and it is a great source of protein, especially if eaten with quinoa or a yoghurt mint dressing (note - this would convert it to a vegetarian dish).
