
Honey Mustard Turkey Medallions with Roast Veg
This is a super easy, quick and delicious meal that only takes 15 minutes to make and is full of crunch and flavour.
Ingredients
- 560g (1.2lb or 4 cups) turkey medallions
- 360g (12.7oz or 2 cups) green asparagus stems
- 2 large red bell pepper, sliced
- 40g (2 tbsp) mustard
- 40g (2 tbsp) honey
- 3 tbsp extra virgin olive oil
- 1 tbsp pumpkin seed oil
- 3 tbsp pumpkin seeds
- Salt and pepper to taste
Instructions
- Preheat the oven to 220C/ 428F degrees fan
- Drizzle the veg with olive oil and roast for 10-15 minutes.
- Mix the honey with the mustard, toss the turkey medallions into the mix, then pan fry each side for approximately 4-5 minutes (depending on the thickness of the medallions).
- Remove the veg from the oven and roast the pumpkin seeds for another 4 minutes.
- Arrange on a plate and top with crunchy pumpkin seeds and a drizzle of black pumpkin seed oil.
