A delicious and nutritious beetroot hummus, packed with protein and fibre, perfect as a Mezze side dish or snack.

Ingredients

  • 400g (14oz) cooked beetroot
  • 200g (7oz) chickpeas
  • 2 cloved of garlic
  • 2 tbsp extra virgin olive oil
  • 1 tbsp tahini
  • 1/2 lemon juice
  • 20g (0.7 oz) crumbled feta
  • 6 Kalamata olives

Instructions

  1. Combine the chickpeas, beetroot, olive oil, lemon juice, tahini and garlic in a blender and blend until a smooth consistency
  2. Top with feta and Kalamata olives
  3. Serve with vegetable crudites, as part of a mezze, with seed crackers or with pita as a snack or lunchtime meal.

Notes

This is a super easy and delicious snack or meal that can quickly be prepared. Chickpeas are packed with protein and fibre. Beetroot contains betaine which is helpful in lowering blood pressure, cholesterol and blood glucose, and acts as an antioxidant, protecting against cancer and DNA damage, and supporting sports performance.
