Greek-Style Salmon with Coleslaw

A delicious, super easy & healthy recipe that can quickly be whipped up for dinner and only takes 15 minutes to make.

Ingredients

  • 600g (1.32 lb) wild caught/ organic salmon
  • 1 full recipe Greek coleslaw (see recipe below)
  • 1 tbsp extra virgin olive oil
  • 1-2 lemons
  • 1 tsp fresh thyme
  • 1 tsp dried origanum
  • 3 cloves of garlic, minced
  • Dash of salt and and pepper to taste

Instructions

  1. Prepare the Greek coleslaw as per recipe.
  2. Pan-fry the salmon on medium heat for 5-6 minutes per side (depending on thickness of the fish), with the skin-side up first. Once you turn the salmon, sprinkle with origanum and thyme, lemon juice and in the last 30 seconds add the garlic. Baste the fish with the sauce that has formed regularly.
  3. Serve with more lemon wedges and the coleslaw.

Notes

This is a super healthy meal consisting of healthy protein and omega 3 fatty acids from the salmon which are anti-inflammatory and cardio-protective along with cabbage which is packed with vitamin C and L-glutamine, an amino acid which helps repair the muscles and gut lining, beneficial in people suffering with leaky gut/ permeable gut syndrome.
