
Healthy, Gluten-free Carrot & Walnut Muffins
These delicious muffins are gluten-free, low-sugar and low-carb -a healthy treat that will satisfy your cravings for something sweet.
Ingredients
- 200g (7oz or 1¾ cups) almond flour
- 200g (7oz or 2 cups) finely grated carrots
- 4 tbsp sugar
- 2 tbsp maple syrup
- 50g (1.8oz or 3 tbsp) melted grass-fed butter (salt-free)
- 3 large eggs
- 2 tsp Ceylon cinnamon
- 1/2 a lemon's rind/zest
- 40g (1.4oz or ⅓ cup) coarsely chopped walnuts
- 2 tsp baking soda
- 1 tbsp organic apple cider vinegar
- 2 tsp vanilla essence
Instructions
1. Preheat the oven to 180 degrees Celsius fan (350 degrees Fahrenheit fan)
2. Whisk the eggs, combine with the vanilla essence.
3. Mix the dry ingredients (cinnamon, almond flour, baking soda and walnuts), add the grated carrots, then add the melted butter and egg mixture, combine well.
4. Place 6 muffin papers/ cupcake pan liners into a 6 muffin baking tray (or grease the tray).
5. Scoop the muffin mixture into the muffin tray (about 115g/4oz mixture per muffin).
6. Bake for 20-25 minutes or test by pushing a toothpick into a muffin and if it withdraws without any mixture, the muffins are ready.
7. Place on a rack to cool for 15 minutes and then serve, or place in an airtight container covered with a paper-towel lining in a cool, dry place.
Notes
These delicious, moist, healthy muffins are a great alternative to carrot cake or sugar-laden cupcakes, made with almond flour, walnuts and eggs for extra protein for a guilt-free, tea-time snack or breakfast. Each muffin contains approximately a 1/3 of the daily required magnesium and is packed with healthy omega 3 fatty acids, both of which are important for stressed or busy individuals or to reduce chronic inflammation, support cardiovascular health or just improve general wellbeing. The muffins also contain zinc and vitamin A, both important for the gut mucosa, and this, together with being gluten-free, can form part of a healthy snack to support gut health and permeable gut.
