This is an easy, gluten-free, low-sugar granola that is super delicious, packed with fibre healthy fats such as omega 3 and protein.
Ingredients
- 100g (3.5oz) walnuts, coarsely chopped
- 100g (3.5oz) whole-grain gluten-free oats
- 50g (1.8oz) coconut flakes
- 50g (1.8oz) dried cranberry (apple sweetened)
- 50g (1.8oz) sunflower seeds
- 50g (1.8oz) flax seeds
- 20g (2 tbsp) green Canderel sweetener (stevia & erythritol)
- 50g (1/5 cup) extra virgin olive oil
- 1 tsp vanilla essence
- 1 tsp Ceylon cinnamon
Instructions
1. Preheat the oven to 150C / 300F degrees fan
2. Combine all the ingredients in a bowl, then spread out on a baking tray
3. Bake for 15 minutes, stirring halfway through.
Notes
This is a delicious, low-sugar, high-fibre, gluten-free granola that can easily be made and enjoyed with berries and Greek yoghurt.
