
Italian Tuna & Tomato with Sourdough Bread
A delicious and nutritious Italian-cuisine inspired lunch that is easy to make and packed with vegetables, healthy fats and protein.
Ingredients
- 2X 100g (3.5oz) cans of tuna, drained
- 400g (14oz) can of whole tomatoes
- 1/2 red onion, chopped
- 1 tbsp origanum
- 50g (1.8oz) pitted Kalamata olives
- 2 tsp extra virgin olive oil
- 2 slices of sourdough bread (see recipe below)
- Pinch of salt and pepper to taste
Instructions
- Combine all the ingredients well, cutting the tomatoes.
- Drizzle the sourdough bread/toast with olive oil and serve with the tuna-tomato mix.
