This is a delicious, quick and healthy vegetarian lunch meal which is gluten-free, vegan and low-calorie friendly.

Ingredients

  • 200g (7oz) lentils
  • 80g (2.8oz) cherry tomatoes
  • 40g (1.4oz) / 2 cups rocket/ aragula
  • 30g (1oz) walnuts
  • A drizzle of olive oil and balsamic vinegar
  • Salt and pepper to taste

Instructions

Coursely chop the walnuts, finely chop the rocket/ aragula, slice the cherry tomatoes in half and arrange in a bowl with the lentils, then drizzle with extra virgin olive oil and balsamic vinegar.

The rocket/aragula contributes to your daily greens and the tomatoes are packed with vitamin C.
