
Mexican Roast Veg & Gluten-free Tortilla
A delicious, crunchy, nutritious Mexican roast vegetarian vegetable dish that is packed with healthy veg and protein.
Ingredients
- 200g (7oz or 1 cup) sweetcorn from a cob, shelled
- 2 large tomatoes, cut into cubes.
- 1 large courgette, sliced
- 1 large head of broccoli, cut into florets
- 600g (21oz or 3.5 cups) kidney beans, drained
- 120g (4.2 oz or ¾ cup ) feta, crumbled
- 1 tbsp cumin
- 1 tbsp origanum
- 1 tbsp smoked paprika
- 1 tsp celtic salt
- 6 tbsp extra virgin olive oil
- 6 gluten-free tortillas
- 2 spring onions, sliced.
Instructions
1,. Preheat the oven to 180C/350F (fan).
2. Arrange the veg in a large oven dish, sprinkle with spices, salt and olive oil and bake for 50 minutes, stirring every 15 minutes. Sprinkle with crumbed feta in the last 10 mintues of roasting.
3. Warm up the tortillas and serve with the roast veg, salsa or a green coriander yoghurt sauce.
Notes
This is a super tasty gluten-free and vegetarian meal, especially when combined with the green coriander dressing. One serving contains 3 servings of veg, healthy protein and lots of fibre, that will leave you satiated and satisfied.
