
Thai Basil Chicken Stir-fry
This is an easy to prepare, flavour-packed, healthy and gluten-free dinner meal.
Ingredients
- 300g (10.6oz) chicken mince
- 200g (7oz) carrots, grated
- 140g (5oz/ 2 medium) shallots, chopped
- 125g (4.4oz) mung bean sprouts
- 15g (0.5oz) Thai basil/ holy basil or sweet basil
- 1 packet (70g/2.5oz) Thai Basil Paste
- 2 lemongrass stalks, sliced & crushed
- 1 tbsp ginger, grated
- 1 tbsp fish sauce
- 1 tsp sugar
- 100g rice vermicelli noodles + 1 cup boiling water
- 1 tbsp extra virgin coconut oil
Instructions
- Fry the shallots, ginger, lemon grass, carrots together with the paste and coconut oil over medium heat for 5 minutes.
- Add the chicken mince, sugar and fish sauce and cook for another 10 minutes, then turn off the heat and add the mung beans and chopped basil leaves and cover.
- Soak the vermicelli noodles for 3 minutes in boiling water, then drain, combine with the stirfry, stir well, and serve.
Notes
This is a very easy, e & satisfying dish to make for dinner, that is high in protein, fibre, vegetables and low in calories & fat. It is also gluten-free friendly. You could serve with cashew nuts to increase the calorie content if you are not following a weight-loss programme. For those following a gluten-free plan, try to use a gluten-free paste.
