Thai Basil Chicken Stir-fry

This is an easy to prepare, flavour-packed, healthy and gluten-free dinner meal.

Ingredients

  • 300g (10.6oz) chicken mince
  • 200g (7oz) carrots, grated
  • 140g (5oz/ 2 medium) shallots, chopped
  • 125g (4.4oz) mung bean sprouts
  • 15g (0.5oz) Thai basil/ holy basil or sweet basil
  • 1 packet (70g/2.5oz) Thai Basil Paste
  • 2 lemongrass stalks, sliced & crushed
  • 1 tbsp ginger, grated
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 100g rice vermicelli noodles + 1 cup boiling water
  • 1 tbsp extra virgin coconut oil

Instructions

  1. Fry the shallots, ginger, lemon grass, carrots together with the paste and coconut oil over medium heat for 5 minutes.
  2. Add the chicken mince, sugar and fish sauce and cook for another 10 minutes, then turn off the heat and add the mung beans and chopped basil leaves and cover.
  3. Soak the vermicelli noodles for 3 minutes in boiling water, then drain, combine with the stirfry, stir well, and serve.

Notes

This is a very easy, e & satisfying dish to make for dinner, that is high in protein, fibre, vegetables and low in calories & fat. It is also gluten-free friendly. You could serve with cashew nuts to increase the calorie content if you are not following a weight-loss programme. For those following a gluten-free plan, try to use a gluten-free paste.
