This is the perfect side dish to any middle-eastern or Moroccon cuisine, that is healthy and full of flavour.

Ingredients

  • 100g (3.5oz or ½ cup) dry pearl couscous or quinoa
  • 300g (10.6oz or 2 cups) chopped cherry tomatoes
  • 60g (2.1oz) or 2-3 lemons for juice
  • 30g (1.6oz) mint finely chopped
  • 30g (1.6oz) flat-leaf parsley
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp celtic salt
  • Pinch of black ground pepper

Instructions

  1. Cook the pearl couscous or quinoa as per directions on the packaging
  2. Finely chop the herbs, and chopped tomatoes, olive oil, lemon juice, pepper and salt.
  3. Drain the couscous/quinoa, cool, then add to the chopped tomato mix.
  4. Serve with any Moroccan or Middle-Eastern dish as a side.

Notes

This is a delicious, fresh and easy dish to make to enjoy as a side dish to Middle-Eastern cooking. Pearl couscous is traditionally used, however quinoa can be used instead to increase the protein, fibre, micronutrients and make the dish gluten-free.
