
Chinese 5 Spice Chicken and Cashew Stir Fry
This is a very easy, healthy, low-calorie, paleo-friendly and gluten-free stir-fry recipe that is suitable for the whole family and pack lots of flavour.
Ingredients
- 500g (17.6oz) chicken breast pieces
- 400g (14oz) Chinese cabbage, thinly sliced
- 200g (7oz) shiitake mushrooms, sliced
- 100g (3.5oz) shallot onions, chopped
- 100g (3.5oz) raw, unsalted cashews
- 1 tbsp grated ginger
- 2 cloves minced garlic
- 1 tbsp extra virgin coconut oil
- 2 tbsp gluten-free soya sauce
- 2 tsp honey/ maple syrup
- 2 tsp Chinese 5 Spice
- 1 stalk spring onion, sliced
Instructions
- Fry the coconut oil, onions, spice, ginger and mushrooms and cook on medium-high heat for about 5 minutes in a wok, then add the cabbage, chicken, garlic, soya sauce and honey/maple syrup and stir fry for another 10 minutes.
- Sprinkle with cashews and spring onion and serve as is or with black rice/ cauli-rice.
Notes
This is a super easy dish to make that is healthy and nutritious and family-friendly, paleo-friendly, low-carb (if eaten without rice), gluten-free and low in calories, whilst still being delicious and exotic in flavour. Always try to use organic produce where possible.
