
Tuna Avocado Salad on Sourdough Toast
A delicious, nutritious, quick and easy lunch to whip up at home or at work which is packed with goodness.
Ingredients
- 100g (3.5oz or 1 can) drained tuna
- 80g (2.8oz or 1/2 cup) cherry tomatoes, cut
- 1/4 medium red onion, finely chopped
- 2 medium slices sourdough bread (see recipe below)
- 1 tbsp Greek yoghurt
- 1/2 lemon juice
- 1 pinch of salt
- 2 tbsp broccoli sprouts
- 80g (2.8oz or 1/2) sliced avocado
- Sea salt and black pepper to taste
Instructions
- Lightly toast the sourdough slices
- Mix the tuna, tomatoes, onions, yoghurt and lemon juice in a bowl, then arrange on sourdough toast and top with sliced avocado, sprouts and a dash of salt and pepper to taste.

This is an easy lunch meal that can quickly be prepared, which is high in fibre, protein and healthy mono-unsaturated fats that support cardiovascular health by lowering cholesterol and inflammation and contains 2 portions of vegetables per serving.
