Easy and tasty low-calorie salad that can be served as a side dish to Italian meals or with sourdough bread or gluten-free bread as a light lunch

Ingredients

  • 3 cups rocket/ aragula
  • 160g (5.6oz or 1 cups) cherry/vine tomatoes sliced in half
  • 120g (4.4oz) buffallo mozzarella
  • 1 tbsp balsamic glaze
  • 3 tbsp extra virgin olive oil
  • 15g (0.5oz) chopped basil

Instructions

  1. Place the rocket/aragula & basil on a serving plate, then arrange the sliced buffalo mozzarella and tomatoes on the top, then drizzle with olive oil and balsamic glaze and serve

Notes

Try to use organic produce where possible. It is recommended to get deep red, ripe tomatoes, and a good quality Italian balsamic glaze and decent quality extra virgin olive oil to enhance the flavours in this dish. Italian cuisine celebrates simple yet tasty ingredients. This dish can easily be eaten as a side dish, or as a mains with sourdough bread or gluten-free bread. Rocket is considered a leafy green and a cruciferous vegetable, and contains sulphur compounds that support liver and hormone health.
