A quick and easy cranberry compote recipe which can be used to drizzle over porridge or yoghurt.
Ingredients
- 350g (12.3oz or 2 cups) cranberries
- 2 tbsp Canderel sweetener (stevia and erythritol)
- 2 tbsp sugar
- 60g (2.1oz or 1/4 cup) filtered boiling water
- 30g (1oz) lemon juice (or juice of one lemon)
- 1 tsp lemon zest
Instructions
1. Bring all the ingredients to boil in a medium pot, then turn down the heat and simmer for 5 minutes or until cranberries burst.
2. Can be served for breakfast with yoghurt or as a sauce.
Notes
Quick and easy way to prepare cranberries if you find them too tart or sour. Cranberries are high in proanthocyanins, which are antioxidants that decrease inflammation, support cardiovascular and urinary system health, preventing infections.
