Mediterranean Roast Chicken & Veg

A hearty, juicy and nutritious roast chicken & vegetable recipe that is super easy to make.
Ingredients
- 1.5Kg (3.31 lb) organic chicken
- 1 cup chicken stock (MSG-free)
- 1 tbsp butter (unsalted)
- 1 tbsp olive oil
- ½ tsp salt
- 2 large courgettes, sliced
- 1 large celery root bulb, cubed
- 4 garlic cloves
- Sprinkle of origanum
- 2 tbsp fresh thyme
- 2 tbsp fresh rosemary
Instructions
- Preheat the oven to 180C /350F degree fan setting (200C/390F normal setting)
- Place half of the thyme and sliced onions on a medium sized oven dish & cover with chicken stock
- Carefully spread the butter underneath the skin using your fingers over the chicken breasts – try not to tear the skin.
- Place the the rest of the thyme, the garlic and the rosemary inside the chicken
- Sprinkle with salt and herbs.
- Place the chicken breast side up in the oven dish, arrange the vegetables and roast for 1.5 hours, stopping every 30 minutes for the first hour to pour the stock mixture over the chicken
- Remove the chicken from the oven, cover and allow to rest for 15 minutes.
