Creamy Honey-Mustard Pork

Easy, quick and nutritious low-carb week-time meal packed with protein and fibre.
Ingredients
- 400g (0.88 lb) pork fillet
- 1 tbsp honey
- 1 tbsp mustard
- 1 shallot, finely chopped
- 1 tbsp extra virgin olive oil
- 100ml (0.4oz / ½ cup) chicken stock, MSG free
- 150g (5.3 oz or about ⅔ cup) Greek yoghurt
- 1 shot dark rum
- 300g (0.66 lb) asparagus (bottom third peeled)
- 1 tsp thyme
- Sprinkle of salt & pepper
- 1 tsp flour
Instructions
1. Sauté the shallot 1–2 minutes
2. Add the rum and let it bubble for 30–60 seconds so the alcohol cooks off.
3. Add chicken stock, mustard, and honey.
4. Simmer 2–3 minutes until slightly reduced.
5. Add the yogurt without splitting – in a small bowl mix: Greek yogurt, 1 tsp flour (important stabiliser), then temper it by adding 2–3 tablespoons of the hot sauce into the yogurt while whisking.
6. Turn the pan to low heat & stir the yogurt mixture into the sauce, and reduce.
7. Pat the pork fillet dry, heat olive oil in a pan over medium-high heat sear the pork 2–3 minutes per side until nicely browned, then lower heat and cook another 5–7 minutes, turning occasionally. Remove and let it rest 5 minutes.
8. Blanche the asparagus in 100ml boiling water for 2-3 minutes.
9. Drizzle the sauce over the pork and serve with the asparagus, serve and enjoy.
Notes
Creamy honey mustard sauce is traditionally made with cream and is quite a rich sauce, so I have replaced the cream with Greek yoghurt to make it slightly lighter and more protein-packed, and therefore suitable for weight-loss protocols or for anyone trying to watch their saturated fat. You can of course replace the Greek yoghurt with cream if you wish, which will also be super delicious, although higher in calories. Low-carb diets have been shown to be an effective way for women to lose weight, so I've cerated an easy-to follow recipe which only takes 15 minutes to make – ideal for busy, stressed women trying to regain their health and watch their weight.
