Healthy Chicken & Mayo Salad

A delicious, light and nutritious chicken, avocado, mayo & spinach salad recipe ideal for weight loss or low-carb meals.
Ingredients
- 250g (9 oz or ½ cups) chicken breast
- 1 avocado, sliced
- 100g (3.5 oz or ¾ cup) cherry tomatoes, sliced in half
- 1 tbsp parsley
- 2 tbsp mayonnaise
- 2 tbsp Greek yoghurt
- ½ tbsp white wine vinegar
Instructions
- Place the chicken and vegetables in a bowl.
- Mix the yoghurt with the mayo and vinegar, then drizzle into the bowl, mix well and serve.
Notes
I'm a huge fan of chicken & mayo, however traditional recipes contain a lot of calories and fat from the mayonnaise, so this recipe has been adapted by replacing half of the mayo with Greek yoghurt to reduce the calories and increase the creaminess and protein content – making this ideal for healthy light and weight-loss meals. Eating protein-rich meals with healthy fats also helps to balance blood-sugar and insulin, thereby helping alleviate hormonal fluctuations. At only 4.4g of net carbs, this meal is also low-carb and keto friendly.
