A tasty roast beef sandwich combined with healthy sourdough/ GF bread, cottage cheese, horseradish and avocado.

Ingredients

  • 2 slices of sourdough (see recipe below) or gluten-free bread
  • 20g/ 1 cup aragula/ rocket
  • 60g (2oz/ 1/4 cup) cottage cheese
  • 1 tsp horseradish
  • 1/2 large avocado, sliced
  • 2X 30g (1oz) slices of deli roast beef (without artificial preservatives)
  • Salt & pepper to taste

Instructions

  1. Stir the horseradish into the cottage cheese.
  2. Place the rocket on the sourdough or GF topped with the roast beef, then cottage cheese and avocado on the top.

Notes

A delicious lunch time meal high in fibre, with healthy protein, fat, complex carbohydrate and 1.5 portions of vegetable. Deli / sandwich meat is often highly processed and contains harmful preservatives, so if you are running out of ideas for sandwich toppers, try roast beef.
