Roast Courgette, Basil & Feta Salad

A delicious Mediterranean-inspired roast courgette, basil, tomato & feta salad, perfect as a light meal or to accompany other Mediterranean dishes.
Ingredients
- 2 large yellow courgettes, sliced
- 100g (3.5 oz or ⅔ cup) feta cheese, crumbled
- 2 large spring onions, sliced
- 180g (6.3 oz or 1¼ cups) cherry tomatoes, sliced
- 30g (1.1 oz or 2 cups) fresh basil leaves/ rocket
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze
- 1 tbsp roasted pumpkin seed oil
- ¼ tsp sea salt
- 1 tbsp pumpkin seeds
- 1 tbsp dried origanum
Instructions
- Preheat the oven to 180C/ 350F fan
- Sprinkle the origanum, olive oil & salt over the courgette and roast for 30 minutes, stirring halfway through, then take out of the oven and allow to cool.
- Arrange the basil, spring onion, courgette, tomatoes, feta, pumpkin seeds, pumpkin oil and balsamic vinegar on a serving dish and serve.
Notes
I love the fresh and healthy ingredients of this dish, pairing together well to celebrate all the healthy ingredients. Yellow courgette has a nuttier flavour than green courgette, however you can also use the latter if you cannot find yellow courgette. You can buy store-bought roast courgette if you are trying to make a quick and convenient lunch-time meal, which you would double up, i.e. this would make 2 servings if you are eating it as a mains and 4 servings if you are eating it as a side.
