If you are looking for a delicious side vegetable dish, try out this sautéed green beans and dried apricots dish.
Ingredients
- 350g (12.3 ounces or 2½ cups) green beans (stalks removed)
- 100g (3.5 ounces or ⅔ cup) dried apricots, sliced
- 1 tbsp unsalted butter
- 100g (3.5 ounces or ⅔ cup) shallots, diced
- 100ml (3.4 ounces or ⅓ cup) filtered, boiling water
Instructions
- Parboil the green beans & apricots in 100ml (⅓ cup) for 5 minutes.
- Fry the shallots in butter, then combine all the ingredients and sauté for another 2-3 minutes and serve with protein of choice.
