A delicious breakfast or lunch meal high in good quality protein, omega 3 fatty acids and healthy leafy greens that will easily keep you going till your next meal.
Ingredients
- 5 large eggs
- 60g (3 cups) chopped kale (organic)
- 50g (1.76oz) smoked salmon
- 50g (1.76oz) feta
- 2 large slices sourdough (see recipe link below)
- 1 tsp unsalted butter
Instructions
- Melt the butter, stir-fry the kale for about 1 minute, then add the eggs & crumbled feta, and scramble the mixture. Serve on sourdough toast
Notes
Having a balanced plate meal can me tricky sometimes, but this meal is easy -to-prep and contains healthy protein and 2 portions of green leafy veg. Kale is considered a cruciferous vegetable and a leafy green, and this way of eating it is quite delicious, giving you the added benefits of being high in fibre, iron and magnesium, and also containing hormone-balancing and anti-cancer plant compounds.
