Super easy and packed full of fresh goodness and vegetables, try these veggie-loaded ground beef wholewheat wraps.

Ingredients

  • 400g (0.88lb) lean ground beef
  • 1 medium aubergine, cubed
  • 1 red bell pepper
  • 1 onion
  • 1 tbsp extra virgin olive oil
  • 400g (14 oz or 1¾ cups) canned tomato
  • 1 tbsp cumin
  • 1 tbsp origanum
  • 1 tbsp smoked paprika
  • 2 limes
  • 4 tbsp fresh coriander
  • 120g grated cheese
  • 4 wholegrain tortilla wraps
  • 1 tsp dried chilli
  • Salt & pepper to taste
  • 2 cloves minced garlic

Instructions

  1. In a pan fry the onion till golden brown, add the chopped bell peppers, then add the ground beef and caramelise.
  2. Add the chopped aubergine, canned tomato, 2 tbsp fresh coriander, herbs, garlic and spices and let the dish simmer for 30 minutes, reducing it toward the end.
  3. Serve on a wholegrain tortilla with grated cheese, fresh coriander and lime juice.

Notes

During the week it is often difficult to cook delicious, easy and nutritious meals, and traditional Tex Mex can be quite unhealthy, this is why I have created a veggie packed version with extra goodness from the wholegrain tortilla wraps and cooked in a way that that is still super delicious and full of fresh, zesty flavours. Eating wholesome self-cooked meals are ideal to improving general health, balancing blood sugar, weight loss and balancing hormones.
