A delicious, quick and easy, fresh tasting salsa recipe that can be paired with fajitas, tortillas or nachos.

Ingredients

  • 300g (10.6oz or 2 cups) cherry tomatoes
  • 1/2 red onion
  • 2 limes
  • 1/2 tsp cumin
  • 1 clove garlic
  • 1/2 tsp chilli powder
  • 2 tsp agave syrup
  • 1 tbsp extra virgin olive oil
  • 1 tbsp coriander leaves
  • 1/2 tsp Celtic salt
  • Pepper to taste

Instructions

  1. Mince the garlic and set aside for 10 minutes
  2. Finely chop onions, tomatoes, coriander leaves and add to a bowl
  3. Squeeze the limes, add the olive oil, garlic, cumin, chilli, salt, agave and pepper to the tomato & onion mix and stir wellI and serve
  4. If you prefer a spicier salsa, you can add more chilli as needed
