A tasty, healthy and easy-to-make Italian-style roast chicken, pesto, tomato & Mozzarella recipe that can be enjoyed with a salad or a side of veg.
Ingredients
- 2 chicken breasts
- 80g buffalo Mozarella, sliced
- 2 tbsp pesto (see recipe below)
- 1 large tomato, sliced
Instructions
- Preheat the oven to 180C/ 350F fan
- In a greased oven dish, layer the chicken breasts, then the pesto, then tomato and buffalo Mozzarella, roast for 20 minutes (25 minutes for very large chicken breasts).
Notes
