A tasty, healthy and easy-to-make Italian-style roast chicken, pesto, tomato & Mozzarella recipe that can be enjoyed with sautéed green beans.

Ingredients

  • 2 chicken breasts
  • 80g (2.8 oz or ½ cup) buffalo Mozarella, sliced
  • 2 tbsp pesto (see recipe below)
  • 1 large tomato, sliced
  • 350g (12.3 ounces or 2½ cups) green beans (stalks removed)
  • 100g (3.5 ounces or ⅔ cup) dried apricots, sliced
  • 1 tbsp unsalted butter
  • 100g (3.5 ounces or ⅔ cup) shallots, diced
  • 100ml (3.4 ounces or ⅓ cup) filtered, boiling water

Instructions

  1. Preheat the oven to 180C/ 350F fan
  2. In a greased oven dish, layer the chicken breasts, then the pesto, then tomato and buffalo Mozzarella, roast for 20 minutes (25 minutes for very large chicken breasts).
  3. Parboil the green beans & apricots in 100ml (⅓ cup) for 5 minutes.
  4. Fry the shallots in butter, then combine all the ingredients and sauté for another 2-3 minutes and serve with the roast chicken breast.

Notes

This is a delicious meal that can easily be doubled for a family of 4 and best served with a simple side of salad with rocket and cherry tomatoes. Click here for a homemade pesto recipe.
