Crumbed Chicken & Cheesy Broccoli

A delicious, low-carb, healthy, protein-packed meal that only takes 20 minutes to make and is ideal for weigh-loss diets.
Ingredients
- 360g (2X medium/ 0.79 lb) chicken breasts
- 40g (1.41 oz/ ½ cups) bread crumbs
- 1 large egg
- 1 medium head broccoli, cut into florets
- 40g (1.41 oz/ ½ cups) grated cheese
- 1 tsp olive oil
Instructions
- Preheat oven to 180C/350F.
- In an oiled pan, cook the chicken breasts for 1-2 minutes per side, sealing the meat, then transfer to an oven dish and cook for another 15-18min, then rest for 5 minutes.
- In a pot, add the broccoli florets and 100ml (3.38 fl oz/3.38 fl oz) boiling water, and cook on high for 2-3 minutes, drain, then add the cheese.
- Serve with the crumbed chicken.
