Delicious, zesty & sweet baby carrots, perfect side dish to Sunday roasts or festive meals, especially if you are watching your weight.
Ingredients
- 500g (17.6oz/ 4 cups) baby carrots
- 1 tbsp butter
- 1 tbsp sugar
- Juice of ½ lemon
- 1 tbsp parsley, choped
Instructions
- Par-boil the carrots for 10 minutes, then cook in a pan with butter, lemon juice and sugar for another 10- 15 minutes, caramelising the carrots.
- Serve with fresh parsley.
