A super easy, healthy, tasty salad, perfect for light summer lunches or heartier festive season/ meals Sunday roast meal accompaniments.

Ingredients

  • 125g (4cups / 4.4oz) baby spinach
  • 1 grated beetroot
  • 100g (3.5 oz/ ½ cup) pomegranate seeds
  • 2 tbsp fresh mint
  • 80g (2.8oz = ½ cup) feta, cubed
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze/ vinegar
  • 1 sliced spring onion

Instructions

  1. Arrange in a bowl, then dress with olive oil and vinegar.
