A super easy, healthy, tasty salad, perfect for light summer lunches or heartier festive season/ meals Sunday roast meal accompaniments.
Ingredients
- 125g (4cups / 4.4oz) baby spinach
- 1 grated beetroot
- 100g (3.5 oz/ ½ cup) pomegranate seeds
- 2 tbsp fresh mint
- 80g (2.8oz = ½ cup) feta, cubed
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze/ vinegar
- 1 sliced spring onion
Instructions
- Arrange in a bowl, then dress with olive oil and vinegar.
