A delicious and healthy, comforting broccoli soup that can easily be whipped up into a silky consistency and served with tangy feta and naturally fermented sourdough toast.
Ingredients
- 1 large head of broccoli
- 200g (7oz or 1 ½) feta, cubed
- 1 tsp vegetable stock or 1 cube (organic, MSG-free)
- 2 cups boiling water
- 4 tbsp olive oil
- 1 tbsp roast pumpkin oil (optional)
- 8 medium slices wholewheat sourdough toast
Instructions
- Preheat oven to 180C / 350F fan
- Place broccoli florets into an oven dish, feta, and drizzle over the olive oil, and roast for 20-25 minutes.
- To prepare the stock, dissolve it in a cup of freshly boiled hot water.
- In a blender, add the roast broccoli, feta, stock & water, blend well, serve with a drizzle of pumpkin oil and sourdough toast.
Notes
