A delicious, easy and healthy nutritious lunch meal with wholewheat sourdough, healthy protein from the cottage cheese and a delicious side salad.

Ingredients

  • 2 Slices wholewheat sourdough toast
  • 100g (½ cup or 3.5 oz) 4% cottage cheese
  • 100g (⅔ cup/ 3.5 oz) cherry tomatoes, sliced
  • 30g / 1 cup mixed greens/ baby spinach/ rocket
  • Drizzle of balsamic glaze

Instructions

    Toast the bread, add the cottage cheese, make the simple salad, drizzle with balsamic glaze and enjoy.

Notes

Sometimes it's really difficuly to get in your daily greens and vegetables, so this meal includes a really simple salad which includes both. Daily greens are recommended for chlorophyll, an antioxidant which helps detoxify, lower inflammation and protects the liver. Greens are also packed with B vitamins, iron and magnesium, vital for energy and hormone regulation. Cottage cheese is a fermented dairy and is considered a good source of protein. Cherry tomatoes are laoded with vitamin C, I love added them to my dishes as sides or snacking on them as they are packed with nutrients and are low in sugar.
