Salmon, Asparagus & Tomato Pasta
A delicious & nutritious Mediterranean dish that is packed with good quality protein and vegetables.
Ingredients
- 400g (14.11oz) salmon (organic)
- 380g (13.4 oz/ 2 cups) tomato
- 250g (8.82 oz / 1.5 cups) asparagus
- 100ml (3.38 oz / ½ cup) cream
- 150g (⅔ cup) white wine
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 200g spaghetti, cooked
- Salt & pepper to taste
- 1 tsp Italian herbs
Instructions
- Preheat the oven to 200C/ 350F fan and roast the veg drizzled in olive oil & sprinkled with herbs, salt and pepper for 20 minutes
- Cook the salmon in a bit of olive oil for 4 minutes a side, then add garlic and cook for 30 seconds
- Add the cooked vegetables and wine and reduce for 4 minutes then add the cream and reduce for another 4 minutes, then serve on a bed of spaghetti.
