Chinese Chicken & Corn Soup
This is a super hearty, healthy and tasty dish packed with healing vegetables and spices such as garlic, onion & ginger.
Ingredients
- 400g (0.88 lb.) chicken breast (organic)
- 2 chicken stock cubes (MSG free, organic)
- 250g (1 cup) creamed corn
- 4 cups filtered water
- 175g leek (2 leeks) sliced (don't use the leaves)
- 200g (7oz/ 1½ cups) carrots, sliced
- 175g (6.1oz/ 1 cup) shallot, sliced
- 2 large spring onions
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp extra virgin olive oil
- 1 tsp soya sauce (gluten-free)
Instructions
- Cook the chicken breast in olive oil in a pan for 7 minutes per side, then set aside and pull.
- Fry the shallots for 3 minutes, then add the leeks, carrots and ginger and fry for another 3 minutes, add the garlic and fry for 30 seconds, then add hot water and stock cubes and simmer for for 10 minutes.
- Add the pulled chicken, creamed corn & soya sauce & simmer for another 3 minutes
- Serve with sliced spring onion as a garnish and sourdough or gluten-free toast.
